Averys Bristol Fashion Amontillado pays homage to the historic maritime connection between the port of Bristol and the Sherry triangle of Andalusia. The phrase 'shipshape and Bristol fashion' historically referred to the high standards of preparation required for ships navigating Bristol's extreme tides, a standard of quality Averys applied to their imported sherries. This Amontillado begins its life under a biological veil of flor, developing fresh, yeasty characteristics, before the flor dissipates and initiates a long period of oxidative aging. This dual aging process imparts a beautiful amber hue, a complex bouquet of hazelnuts and dried fruits, and a dry, deeply savory finish that reflects centuries of traditional merchant craftsmanship.

Averys blev grundlagt i Bristol i 1793 og hører til blandt Storbritanniens ældste og mest agtede vinhandlere og négociants. Gennem generationer har visionære personligheder som Ronald Avery og sønnen John Avery MW opbygget huset, der var blandt de første til at opdage og importere toneangivende vine direkte fra klassiske europæiske områder og fremadstormende oversøiske terroirs.
