Bedrock Wine Co.βs Cuv e Karatas is a brilliant homage to the classic, age-worthy dry white wines of Bordeauxβs Graves region, crafted with a uniquely Californian historical twist. This serious white blend is typically composed of S millon and Sauvignon Blanc, drawing from some of the oldest S millon vines in California, notably those planted in the late 19th century at the legendary Monte Rosso Vineyard. Winemaker Morgan Twain-Peterson MW utilizes traditional, low-intervention techniques, including barrel fermentation and aging in French oak and acacia barrels to build a wine of incredible texture, weight, and complexity. The S millon provides a waxy, rich, and structured core with notes of lanolin and stone fruit, while the Sauvignon Blanc injects vibrant acidity and bright citrus aromatics. The name Karatas serves as a proprietary nod to historic structure and stone, representing a white wine built to challenge the red-dominated landscape of Sonoma heritage blends.
