Bedrock Wine Co.’s Cuve Karatas is a brilliant homage to the classic, age-worthy dry white wines of Bordeaux’s Graves region, crafted with a uniquely Californian historical twist. This serious white blend is typically composed of Smillon and Sauvignon Blanc, drawing from some of the oldest Smillon vines in California, notably those planted in the late 19th century at the legendary Monte Rosso Vineyard. Winemaker Morgan Twain-Peterson MW utilizes traditional, low-intervention techniques, including barrel fermentation and aging in French oak and acacia barrels to build a wine of incredible texture, weight, and complexity. The Smillon provides a waxy, rich, and structured core with notes of lanolin and stone fruit, while the Sauvignon Blanc injects vibrant acidity and bright citrus aromatics. The name Karatas serves as a proprietary nod to historic structure and stone, representing a white wine built to challenge the red-dominated landscape of Sonoma heritage blends.
