Stéphane and Bénédicte Tissot's 'Amphore Poulsard' represents a profound return to ancient winemaking traditions in the Jura. Poulsard, a thin-skinned, pale-colored grape native to the region, is highly sensitive and expressive of its terroir. In this cuvée, Tissot eschews modern oak and stainless steel in favor of terracotta amphorae, where the hand-harvested grapes undergo a long maceration on the skins with indigenous yeasts and absolutely no added sulfur. This clay-aging vessel allows for gentle micro-oxygenation, softening the grape's rustic tannins while preserving its delicate, wild red fruit profile, forest floor aromatics, and distinct mineral edge derived from the region's triassic clay and marl soils.
