Hailing from one of the estate's most prized parcels in Montigny-les-Arsures, 'Les Bruyères' is a definitive expression of Jura Chardonnay crafted in the 'ouillé' (topped-up) style. The vineyard is characterized by its distinct Triassic clay and blue marl soils, which face south-southwest, capturing ample sunlight to achieve perfect ripeness. Stéphane Tissot was a pioneer in vinifying this parcel separately to highlight its unique terroir, moving away from the region's traditional oxidative style to emphasize purity, tension, and deep mineral complexity. Fermented with indigenous yeasts and aged in French oak barrels with minimal sulfur, this wine beautifully balances a rich, textured palate with an electric, saline acidity that reflects the ancient marine history of the Jura basin.
