While the Jura is legendary for its oxidative white wines, its cool-climate red wines, particularly Pinot Noir, have captured the hearts of wine lovers worldwide. Introduced to the region from neighboring Burgundy in the Middle Ages, Pinot Noir has found a unique expression in the complex clay and limestone soils of Arbois. Stéphane and Bénédicte Tissot craft their Pinot Noir using strict biodynamic principles, harvesting by hand and fermenting with indigenous yeasts in large wooden vats with minimal sulfur. The wine is aged in oak barrels to allow the pure, vibrant voice of the terroir to speak. This wine captures the wild, untamed spirit of the Jura, offering a delicate yet intensely aromatic profile of red currants, forest floor, and a distinct mineral tension that sets it apart from its Burgundian cousins.

Domaine Tissot blev grundlagt i Montigny-lès-Arsures i 1962 af André og Mireille Tissot, men gennemgik en skelsættende forvandling, da Stéphane og Bénédicte Tissot overtog tøjlerne i 1990. Parret har haft en afgørende rolle i at bringe Juras vine op i den absolutte verdenselite. De udfasede al syntetisk kemi, opnåede økologisk certificering i 1999 og fuld biodynamisk Demeter-certificering i 2004 for ejendommens cirka 35-50 hektar. Domænet råder over fremragende mikroklimaer og parceller som Les Bruyères, La Mailloche, En Barberon og Curon, der er præget af det kontinentale bjerglignende klima samt en kompleks jordbund af jurakalk og karakteristiske blå, grå og røde mergellag. Stéphane er en passioneret fortaler for mikroskopisk parcelvinificering, hvor der arbejdes med den naturlige gær, lerkrukker, et absolut minimum af svovl og en uforfalsket respekt for terroirets særpræg. Tissots imponerende portefølje spænder fra knivskarpe, ikke-oxidative ouillé-aftapninger som Chardonnay Clos de la Tour de Curon og Les Bruyères over sublime traditionelle sous voile-vine til monumentale Vin Jaune-fortolkninger. Samlet udgør vinene en kompromisløs opvisning i geologisk præcision.
