Crafted by the visionary Stéphane Tissot, the 'Vin Jaune W' represents a fascinating masterclass in the impact of cellar microclimates on the oxidative aging of Savagnin. While all Vin Jaune must undergo the legendary aging process of at least six years and three months under a veil of wild yeast (la voile) without topping up, Tissot isolates his barrels in different cellars to study the results. The 'W' designates a warmer cellar environment, where higher temperatures and thermal fluctuations accelerate evaporation and concentration. This unique environment coaxes a remarkably intense, powerful, and deeply complex expression from the Savagnin grape. The resulting wine is a golden-amber elixir boasting profound aromas of toasted walnuts, fenugreek, curry spices, and dried stone fruits, backed by the searing, mineral-driven acidity characteristic of Jura's ancient marly soils.
