Hailing from the picturesque valleys of Trentino, Cavit's 'Arele' is a prestigious sweet wine crafted in the traditional 'Vino Santo' style, using the native Nosiola grape. The wine's name pays tribute to the 'arele'—the historic bamboo drying racks upon which the grapes are carefully laid after a late autumn harvest. Over several months, the grapes are dried under the influence of the 'Ora del Garda', a warm, dry breeze blowing from Lake Garda that prevents rot while concentrating sugars and flavors. Traditionally pressed during Holy Week, the concentrated juice undergoes an exceptionally slow fermentation and years of aging in small oak barrels. The result is a deep amber nectar characterized by complex aromas of dried apricot, orange peel, wild honey, and toasted hazelnut, balanced beautifully by Nosiola's signature alpine acidity.

Cavit (Cantina Viticoltori del Trentino) blev grundlagt i 1950 og er et førende kooperativ med hovedsæde i Ravina di Trento, omgivet af det dramatiske alpine landskab i Trentino-Alto Adige i Italien. Som et fælles konsortium for tusindvis af tilknyttede vinbønder forener Cavit den regionale arv med topmoderne kortlægning af mikroklimaer, der strækker sig fra Gardasøen til foden af Dolomitterne.
