Founded in 1891 during the late-Victorian whisky boom by the legendary Peter Mackie and Alexander Edward, the distillery has stubbornly clung to traditional methods that others abandoned. Most famous is their continued use of copper worm tubs—coiled pipes cooled in cold water tanks—to condense their spirit. This rapid cooling limits copper contact, leaving a heavy, meaty, and delightfully sulfurous character in the new-make spirit. When matured in a refill bourbon barrel, like this 'Full Cask' No 158, the wood plays a supporting role. Rather than masking the spirit under heavy oak or sherry influence, the refill cask coaxes out Craigellachie's signature tropical fruit notes—think grilled pineapples and baked apples—intertwined with a robust, savory, and slightly smoky complexity.
