✨ Technical Specifications
The Dom Pérignon Chef de Cave Edition Assortment Case is a tribute to the visionary spirit of the Abbey of Hautvillers, where the monk Dom Pierre Pérignon vowed to make the best wine in the world. Unlike most Champagne houses, Dom Pérignon is exclusively produced as a vintage wine, crafted from a precise, tense dialogue between Pinot Noir and Chardonnay. This special assortment case, curated by the Chef de Cave, celebrates the transformative journey of these vintages. It typically brings together different expressions of the house's legendary cuvées, showcasing how extended lees aging—known as the Plénitudes—reshapes the wine's texture, aromatic depth, and minerality. Each bottle in the collection reflects the unique climate of its harvest year, unified by the house's signature smoky reduction, vibrant acidity, and silky, creamy effervescence.
🍾 About the Producer
Dom Pérignon traces its lineage to the pioneering viticultural innovations of 17th-century Benedictine monk Dom Pierre Pérignon at the historic Abbey of Hautvillers, though the house was officially launched as Champagne's first prestige cuvée in 1921 (released in 1936) by Moët & Chandon (LVMH). Rooted across premier crus and historic grand crus in the Montagne de Reims, Vallée de la Marne, and Côte des Blancs, the estate's vines flourish in pure Belemnite and Micraster chalk terroirs that impart profound minerality and tension. Guided by Chef de Cave Vincent Chaperon, Dom Pérignon operates exclusively as a vintage wine, crafted only in years capable of exceptional aging. Blending roughly equal parts Chardonnay and Pinot Noir, the house emphasizes reductive precision, reductive lees aging, and textural interplay without oak intervention. Alongside its flagship Vintage Brut and Rosé, the benchmark Plénitude releases (P2 and P3) reveal metamorphic secondary and tertiary complexity, exemplifying the pinnacle of Champagne's structural grandeur and longevity.
