Domaine Louis Boillot, though widely celebrated for its exceptional collection of old-vine red Burgundies, applies the same meticulous precision to its white wines. This Bourgogne Blanc is crafted from Chardonnay vines grown on clay-limestone soils, often situated near the prestigious borders of Meursault. Boillot's low-intervention philosophy shines through in the cellar, where gentle pressing, indigenous yeast fermentation, and careful aging in French oak barrels with minimal new oak yield a white Burgundy of remarkable purity. The wine beautifully balances the natural richness of the grape with a vibrant, mineral-driven tension, reflecting the storied heritage of the Boillot family and their commitment to expressing the true voice of the terroir.
