The 'Cuvée Cyrot-Chaudron' originates from the historic Hospices de Beaune auction, featuring Clos de la Roche Grand Cru fruit donated to the charity by the Cyrot-Chaudron family. When acquired and nurtured by the legendary Domaine Ponsot—masters of Clos de la Roche—the wine undergoes their signature non-interventionist elevage. Ponsot's traditional approach, utilizing ancient vertical presses and seasoned oak casks without new wood, coaxes out a profound expression of this prestigious terroir. The result is a majestic, deeply structured Pinot Noir that marries the philanthropic heritage of the Hospices with the uncompromising, terroir-first philosophy of the Ponsot estate.

Domaine Ponsot blev grundlagt i 1872 af William Ponsot og er en legendarisk ejendom med base i Morey-Saint-Denis i hjertet af Côte de Nuits i Bourgogne. Domænet er kendt for sin uafhængighed og pionerånd; det var således blandt de allerførste i regionen, der tappede vinene på eget domæne i 1930'erne og gik forrest inden for klonselektion.
