Emiliana's Novas Gran Reserva Cabernet Sauvignon is named in honor of the 'novas'—the sudden appearance of bright new stars in the night sky that ancient astronomers used to guide their understanding of the cosmos. This connection to the heavens is deeply rooted in Emiliana's biodynamic philosophy, where vineyard cycles are aligned with natural and celestial rhythms. Sourced from organic vineyards within Chile's renowned Central Valley, this wine benefits from the dramatic diurnal temperature shifts created by the cooling breezes of the Andes Mountains and the Pacific Ocean. The grapes are harvested by hand and fermented in stainless steel before undergoing aging in oak barrels. The resulting wine is a pure, vibrant expression of Chilean terroir, characterized by its deep ruby color, rich red fruit aromas, subtle spice, and structured, elegant tannins that reflect the estate's commitment to harmony with nature.

Emiliana blev grundlagt i 1986 af Guilisasti-familien og har siden udviklet sig til verdens førende producent af økologiske og biodynamiske vine. I slutningen af 1990'erne gik den visionære direktør Rafael Guilisasti sammen med den anerkendte konsulterende vinmager Álvaro Espinoza for at bane vejen for bæredygtig vinavl på tværs af Chiles mest prestigefyldte vinregioner, herunder Casablanca, Maipo, Colchagua og Cachapoal Valleys. Emiliana arbejder ud fra Demeter-certificerede biodynamiske principper, hvor syntetiske sprøjtemidler fravælges til fordel for naturlige præparater og lokal biodiversitet for at lade terroiret komme rent til udtryk. Vingården er særligt berømt for sine biodynamiske flagskibsrødvine, heriblandt Coyam og Gê, samt karakterfulde enkeltmarksvine på Carmenère, Cabernet Sauvignon og Syrah.
