The name itself, meaning 'on the heights,' pays homage to the steep, high-altitude vineyards that define this cuvée. Cossard applies his uncompromising non-interventionist philosophy to these old Gamay vines, utilizing whole-cluster fermentation with indigenous yeasts and aging without any added sulfur.
