The name 'Elyssia' evokes the mythical Elysian Fields, hinting at the heavenly sensory experience the winemakers aimed to capture. This premium cuvée is crafted predominantly from Pinot Noir grapes, a variety that thrives in the cooler, higher-altitude microclimates of the Penedès region, imparting vibrant acidity and delicate red fruit aromas. Produced using the traditional method, the wine undergoes secondary fermentation in the bottle and is aged on its lees for at least 18 months. This extended contact adds a creamy texture and subtle brioche complexity to its bright raspberry, cherry, and red currant notes, bridging the gap between classic Spanish sparkling heritage and contemporary international style.
