Crafted primarily from Grenache and Syrah, this red wine captures the essence of the local terroir, characterized by stony, clay-limestone soils and the sweeping Mistral wind. The name 'Payouse' evokes the rustic charm of the historic Provencal countryside. In the cellar, the winemaking team focuses on preserving the bright, primary fruit characteristics through gentle extraction and temperature-controlled fermentation, resulting in a wine that beautifully balances fleshy red berry flavors with the signature wild herb notes of the local garrigue.

Founded in 1936 by Gabriel Meffre and his wife Juliette in the historic village of Gigondas, Gabriel Meffre has grown into one of the Southern Rhône Valley's benchmark wineries and négociant-éleveurs.
