Grappa was historically a rustic, fiery spirit distilled by farmers to avoid waste, but pioneering producers like Angelo Gaja transformed it into an artisanal luxury. The fresh, moisture-rich Nebbiolo grape skins are distilled in copper alembic stills under vacuum to preserve the delicate, volatile aromas of the grape. Founded in 1859 by Giovanni Gaja in the village of Barbaresco, Piedmont, Gaja is one of the world's most legendary wine estates, celebrated for revolutionizing Italian viticulture.
