Domaine de Cigalus, acquired by visionary winemaker Gérard Bertrand in 1995, serves as the crown jewel and family home where his pioneering biodynamic philosophy was first realized. 'L'Indomptable' (The Indomitable) reflects the fierce, untamed spirit of the Languedoc terroir and Bertrand's relentless pursuit of ecological harmony. This exceptional white blend typically marries the richness of Chardonnay, the aromatic floral lift of Viognier, and the crisp acidity of Sauvignon Blanc. Cultivated under strict Demeter biodynamic standards in the warm Mediterranean climate of the Pays d'Oc, the vines benefit from deep, moisture-retaining clay-limestone soils. The wine is partially fermented and aged in French oak barrels with regular stirring of the lees (bâtonnage), yielding a golden, opulent nectar characterized by ripe peach, grapefruit, toasted brioche, and a distinctive mineral freshness.
