Gérard Bertrand's 'Legend Vintage' series represents a liquid archive of the Roussillon's winemaking heritage, featuring rare, decades-old Vins Doux Naturels such as Rivesaltes. These fortified wines are typically crafted from ancient plots of Grenache, Macabeu, and Tourbat grown on the region's rugged schist and clay-limestone terraces. To stop fermentation and preserve the grapes' natural sugars, the traditional method of 'mutage' is employed. The wines then undergo an epic oxidative aging process, spending decades in oak barrels or glass demijohns exposed to the elements. This imparts a legendary complexity characterized by rancio, dried figs, toasted nuts, and sweet spices, capturing the soul of a bygone era in southern France.
