Created by the visionary Dr. Bill Lumsden, this whisky shifts the traditional focus of Scotch maturation from wood to the transformative power of yeast. It is crafted using a bespoke wild yeast strain, Saccharomyces diaemath, discovered growing naturally on the Cadboll barley fields surrounding the distillery. This wild yeast was cultivated and used for fermentation, imparting an unusually rich, bready, and floral character. Aged primarily in second-fill ex-bourbon casks to ensure the unique yeast profile was not overshadowed by heavy oak, Allta offers a fascinating, terroir-driven narrative of the Tarbat Peninsula's native microflora.
