The 'Extremis' cuvée from Domaine Guffens-Heynen represents the absolute outer limits of Jean-Marie Guffens' iconoclastic winemaking philosophy. Produced only in select vintages when weather conditions allow, this rare cuvée is crafted from extremely ripe, sometimes botrytized Chardonnay grapes harvested in successive passes (tries) through his finest parcels in the Mâconnais. Guffens, a legendary provocateur who famously defies Burgundy's rigid hierarchies, coaxes extraordinary power, viscosity, and mineral tension from these ultra-concentrated berries. Fermented with indigenous yeasts and aged extensively on its lees, Extremis is a monumental, multi-dimensional white wine that blurs the line between dry and late-harvest styles, offering an unforgettable, opulent expression of terroir.

Established in 1979 by Belgian native Jean-Marie Guffens and his wife Lydie Heynen, Domaine Guffens-Heynen is located in the picturesque village of Vergisson in Burgundy's Mâconnais region. Widely regarded as a revolutionary visionary, Guffens transformed the reputation of southern Burgundy through uncompromising vineyard husbandry, rigorous manual selections involving multiple passes ('tries') during harvest, and precise, non-interventionist cellar practices. The domaine is world-renowned for crafting extraordinarily concentrated, mineral-rich, and age-worthy white Burgundies from iconic lieu-dits such as En Chavigne and La Roche in Pouilly-Fuissé and Mâcon-Pierreclos, regularly rivaling the finest Grand Crus of the Côte de Beaune.
