The name 'Sauve Eaux' (often playfully rendered as 'Sauve-O') is a classic Guffens pun, phonetically translating to 'Save Water' (as in 'save water, drink wine') while cheekily nodding to grape varieties or stylistic profiles outside the rigid AOC framework. Released as a Vin de France, this bottling represents Guffens' ultimate freedom from bureaucratic appellation laws. Free to experiment, he applies the same obsessive, high-end white Burgundy techniques here as he does to his grandest crus: extremely low yields, natural yeast fermentations, and extended aging on the fine lees.
