The Röttgen vineyard, a dizzyingly steep amphitheater of crumbling blue Devonian slate, catches the intense reflection of the Mosel river, creating a unique microclimate. Here, morning mists encourage the development of noble rot (botrytis), which concentrates the grapes' sugars and acids to an extraordinary degree. Heymann-Löwenstein coaxes this liquid gold through spontaneous fermentation in traditional large oak casks.
