✨ wine.spec_sheet

Hailing from the wind-swept Orkney Islands off the far northern coast of Scotland, Highland Park is legendary for its Viking heritage and dramatic maritime terroir. Founded in 1798 by the colorful smuggler and priest Magnus Eunson, the distillery relies on unique local peat cut from Hobbister Moor. This peat, rich in decomposed heather, imparts a gentle, aromatic, and floral smokiness rather than the medicinal brine of Islay. While Highland Park is famous for its sherry cask maturation, this rare 'Full Cask' No 67 release showcases a single bourbon barrel aging. This choice of wood coaxes out vibrant notes of creamy vanilla, toasted coconut, bright citrus peel, and soft honeyed malt, beautifully balancing the distillery's signature heather-honey smoke.
