Hailing from the windswept Orkney Islands, this single cask expression from Highland Park showcases the distillery's legendary spirit in its most transparent form. While Highland Park is famous for its sherry cask maturation, the use of a refill barrel (Cask No 203) allows the raw, coastal character of the distillate to shine. The peat from Hobbister Moor, rich in decomposed heather, imparts a gentle, aromatic floral smoke rather than the medicinal brine of Islay. This combines with the maritime salinity of the northernmost distillery in Scotland, creating a dramatic profile of heather honey, soft peat, and citrus.
