Originating in the 19th century when Cognac was shipped in casks to England, this practice involves sending selected casks of a single vintage—distilled from grapes grown in the premier cru of Grande Champagne—to mature in the damp, cool, and drafty cellars of Bristol, England. The maritime climate of the UK, characterized by high humidity and low, stable temperatures, dramatically alters the aging process compared to the dry cellars of Jarnac.
