Hailing from Edinburgh's pioneering Holyrood Distillery, this peated single malt represents a bold departure from traditional, light Lowland whisky styles. Distilled in the heart of Scotland's capital, it marries the intense, earthy character of peated malted barley with the sweet, creamy influence of a first-fill Bourbon barrel. The use of first-fill American oak imparts rich layers of vanilla, toasted coconut, and caramel, which beautifully balance the robust, smoky phenols. Holyrood's innovative approach resurrects Edinburgh's rich distilling heritage, combining historical reverence with contemporary flavor experimentation.
🍾 wine.about_producer
Established in 2019 by founders Rob Carpenter and David Robertson, Holyrood Distillery marked the historic return of single malt whisky production to the heart of Edinburgh after nearly a century. Located in a restored 180-year-old railway transit building in the Lowlands, the distillery rejects traditional production constraints in favor of a flavor-forward philosophy. Holyrood is renowned for its experimental use of heritage barley varieties like Golden Promise, specialty roasted malts, and diverse beer yeasts, creating highly complex spirits. Their signature single malt whiskies, often matured in first-fill Oloroso sherry hogsheads, showcase a rich, robust character that redefines modern Lowland distilling.
