Holyrood Distillery's Single Malt Peated 'Full Cask' No 9 represents a bold, modern chapter in Edinburgh's rich distilling heritage. Located in the heart of the historic Lowlands, Holyrood revived single malt production in the Scottish capital after a century-long hiatus following the closure of the Grange Distillery in 1925. This peated expression, matured in a first-fill bourbon barrel, marries the intense, smoky profile of peated malt with the sweet, vanilla-rich influence of fresh American oak. Historically, Edinburgh was famous for its 'Charmed Circle' of breweries and distilleries that drew from the ancient volcanic aquifers beneath the city. Holyrood honors this legacy by experimenting with heritage barleys and specialty yeasts, crafting a spirit that is both a nod to the past and a pioneering step forward. The first-fill bourbon cask aging imparts layers of toasted coconut, caramel, and soft orchard fruits, beautifully balancing the earthy, maritime peat smoke.

Holyrood Distillery blev grundlagt i 2019 af Rob og Kelly Carpenter i samarbejde med den tidligere Macallan-masterdistiller David Robertson. Etableringen markerede en historisk milepæl, da produktionen af single malt whisky dermed vendte tilbage til det centrale Edinburgh efter næsten et århundredes fravær. Destilleriet har til huse i en ombygget jernbanebygning fra 1830'erne, klos op ad Holyrood Park i det skotske Lowlands, og drives ud fra en progressiv filosofi, hvor smagen altid er i absolut centrum. Holyrood udfordrer de traditionelle rammer gennem dybdegående eksperimenter med historiske og særlige bygsorter som Golden Promise, alsidige gærtyper og nøje skræddersyede fadlagringer. Ud over at skabe nuancerede og komplekse single malt-whiskyer er det innovative mikrodestilleri også anerkendt for sine karakterfulde, håndværksmæssige gin, rom og botaniske spiritusser.
