Hailing from the heart of Edinburgh, Holyrood Distillery represents a bold, flavor-first revolution in Lowland single malt Scotch whisky. This highly experimental release showcases their innovative spirit by utilizing red wine yeast during fermentation, a departure from standard distiller's yeast that imparts vibrant berry notes, orchard fruit esters, and a distinctive vinous complexity. Matured in a hand-selected first-fill Bourbon barrel (Cask No. 1964), the spirit absorbs rich layers of creamy vanilla, toasted coconut, and sweet oak from the virgin American oak char. This marriage of brewing-inspired fermentation science and traditional wood management yields a contemporary Lowland malt that challenges traditional regional boundaries, offering a rich, multi-layered sensory journey.

Founded in 2019 by Rob and Kelly Carpenter alongside former Macallan master distiller David Robertson, Holyrood Distillery marked the historic return of single malt whisky distilling to the center of Edinburgh after nearly a century. Situated in a converted 1830s railway goods building adjacent to Holyrood Park in Scotland's Lowlands, the distillery embraces a progressive, flavor-led production philosophy. Driven by extensive experimentation with specialty and heritage barley varieties like Golden Promise, diverse brewing yeasts, and tailored cask regimens, Holyrood pushes traditional boundaries. In addition to producing nuanced, complex single malt whiskies, the craft distillery is celebrated for its distinctive artisanal gins, rums, and innovative botanical spirits.
