Holyrood Distillery, located in the heart of Edinburgh's historic distilling district, is celebrated for its avant-garde approach to single malt production. Rejecting the rigid conventions of traditional Scotch whisky, Holyrood frequently experiments with specialty malts and non-traditional yeast strains. This particular expression showcases their innovative spirit by utilizing a red wine yeast strain during fermentation, rather than standard distiller's yeast. This choice imparts a distinct fruit-forward complexity, unique ester profile, and subtle vinous character to the spirit, which is then matured in selected casks. Established in 2019 by founders Rob Carpenter and David Robertson, Holyrood Distillery marked the historic return of single malt whisky production to the heart of Edinburgh after nearly a century. Located in a restored 180-year-old railway transit building in the Lowlands, the distillery rejects traditional production constraints in favor of a flavor-forward philosophy. Holyrood is renowned for its experimental use of heritage barley varieties like Golden Promise, specialty roasted malts, and diverse beer yeasts, creating highly complex spirits. Their signature single malt whiskies, often matured in first-fill Oloroso sherry hogsheads, showcase a rich, robust character that redefines modern Lowland distilling.
