This legendary Grand Cru cuvée is named in honor of Dr. Jean-Louis Peste, who practiced medicine at the Hospices de Beaune for more than thirty years in the mid-19th century. In 1897, his daughter Colette Peste bequeathed a magnificent estate of vines to the charity in his memory. Sourced from prized parcels on the iconic hill of Corton—specifically within the climats of Bressandes, Clos du Roi, Grèves, and Chaumes—this wine represents one of the most powerful and structured red cuvées offered at the annual Hospices auction. The Pinot Noir vines here, many of which are old, dig deep into the limestone-rich clay soils, yielding a wine of immense depth, robust tannins, and complex dark fruit character that beautifully showcases the muscular side of Burgundy's Grand Crus.

Hospices de Beaune blev grundlagt i 1443 af Nicolas Rolin, kansler for hertugen af Bourgogne, og hans hustru Guigone de Salins. Institutionen blev etableret som et velgørende hospital og blev fra begyndelsen finansieret via donationer af førsteklasses vinmarker. I dag råder det historiske domæne over mere end 60 hektar fremragende placerede Premier og Grand Cru-vinmarker fordelt over Côte de Beaune og Côte de Nuits.
