This cuvée pays direct homage to the 'Chanoines' (canons) of the Chapter of Notre-Dame, who constructed the magnificent 12th-century cellars in Beaune where Maison Jaffelin still ages its wines today. Crafted from Pinot Noir sourced from select vineyards across Burgundy, this wine is a testament to the house's historical roots. Utilizing traditional gravity-flow techniques in their gravity-fed vat room, the winemakers preserve the delicate, bright red fruit profile characteristic of the region.
