Kavalan's Solist Amontillado Sherry Cask is a spectacular Taiwanese single malt whisky that showcases the dramatic effects of subtropical maturation. Located in Yilan County, where the pristine, mineral-rich meltwater of the Snow Mountain range meets the humid Pacific air, Kavalan capitalizes on intense heat to accelerate wood extraction. This expression is matured in hand-selected Amontillado sherry casks—a style of sherry that begins under a protective veil of flor yeast before undergoing oxidative aging. This dual maturation heritage of the cask infuses the spirit with a brilliant amber hue and a complex aromatic profile of toasted almonds, rich hazelnut, dark cacao, and warm baking spices, beautifully balancing Kavalan's signature tropical fruit character of mango and coconut.

Kavalan Distillery blev grundlagt i 2005 af King Car Group under ledelse af grundlægger Tien-Tsai Lee og er beliggende i Yuanshan i Yilan-distriktet på Taiwan. Destilleriet er opkaldt efter det oprindelige Kavalan-folk fra Yilan-sletten og var pioner inden for taiwansk single malt whisky i verdensklasse, skabt på mineralrigt smeltevand fra den nærliggende Snow Mountain-bjergkæde.
