Located in Yilan County, where the pristine, mineral-rich meltwater of the Snow Mountain range meets the humid Pacific air, Kavalan capitalizes on intense heat to accelerate wood extraction. This expression is matured in hand-selected Amontillado sherry casks—a style of sherry that begins under a protective veil of flor yeast before undergoing oxidative aging. Founded in 2005 by the King Car Group under founder Tien-Tsai Lee, Kavalan Distillery is located in Yuanshan Township within Yilan County, Taiwan. Named after the indigenous Kavalan people of the Yilan plain, the distillery pioneered world-class Taiwanese single malt whisky production using mineral-rich meltwater sourced from the nearby Snow Mountain range.
