Crafted in the subtropical climate of Yilan County, Taiwan, the Kavalan Sherry Oak Single Malt Whisky showcases the extraordinary impact of rapid maturation. Utilizing the pure, mineral-rich meltwater from the Snow Mountain range, this expression is aged in select Spanish Oloroso sherry casks. The intense heat and humidity of Taiwan accelerate the wood extraction process, allowing the spirit to develop an incredibly rich, deep profile of dried fruits, nuttiness, dark chocolate, and warm spices in a fraction of the time required in cooler climates. This unique interaction between the spirit and the wood reflects the innovative spirit of the King Car Group and the natural bounty of Taiwan.

Kavalan blev grundlagt i 2005 af Tien-Tsai Lee fra King Car Group og er Taiwans banebrydende single malt-destilleri. Destilleriet ligger på den frodige alluviale slette i Yuanshan-distriktet i Yilan County, flankeret af Stillehavet og Xueshan-bjergkæden (Snow Mountain). Til mæskningen udnyttes det rene, mineralrige smeltevand fra bjergene. Kavalan destillerer på traditionelle kobberkedler, og stedets terroir præges markant af det nordøstlige Taiwans intense subtropiske luftfugtighed og markante temperatursvingninger. Dette ekstreme klima – udviklet i tæt samarbejde med den afdøde fadmodningsekspert Dr. Jim Swan – fremskynder udtrækket fra fadet og iltningen, så års lagring koncentreres i hurtige cyklusser. Gennem et omhyggeligt fadprogram, der navnlig omfatter pionerarbejdet med Shave, Toast and Re-char-processen (STR) samt krydrede sherry- og bourbonfade, opnår Kavalan en exceptionel fylde, intens tropisk frugtkarakter og strukturel elegance. Destilleriets toneangivende Solist-serie, herunder særligt Vinho Barrique- og Oloroso Sherry-aftapningerne fra enkeltfade, nyder enorm international anerkendelse.
