Named 'Quercus' after the majestic oak trees that dot the local landscape, this sparkling rosé is produced using the Charmat method in stainless steel tanks, a process specifically chosen to preserve the pristine, primary red fruit aromas and crisp acidity of the grapes. Grown on steep, terraced vineyards dominated by 'opoka' (mineral-rich marl and sandstone soil), the vines yield fruit with a distinctive mineral backbone, resulting in a sparkling wine that is both playful and remarkably elegant.
