Nestled in the high-altitude desert valleys of Tulum and Zonda, the vines are irrigated by pure Andean snowmelt and bathed in intense, high-altitude sunlight. This extreme climate, characterized by hot days and cool mountain nights, allows the Syrah grapes to develop thick skins, deep color, and intense aromatic complexity. The 'Barrel Select' designation highlights a careful selection of fruit that undergoes fermentation in stainless steel before being aged in a combination of French and American oak barrels for approximately 12 months. This process softens the grape's natural tannins and infuses the wine with subtle notes of vanilla, toast, and sweet spice, complementing its core of dark berry fruit and signature black pepper.
