Representing the depth and complexity of Burgundy's historic terroirs, Louis Jadot's 'Vieilles Vignes' (Old Vines) white wines are sourced from carefully selected parcels where the vines have reached a mature age, typically over 30 years. These deep-rooted vines draw rich mineral character from the classic clay-limestone soils of the region, yielding smaller, highly concentrated grapes. The winemaking philosophy balances tradition and modernity; the juice is fermented and aged in a combination of stainless steel vats to preserve fresh, vibrant fruit flavors and French oak barrels from Jadot's own Cadus cooperage to impart structure, subtle spice, and a round, creamy texture. This approach honors the centuries-old Burgundian heritage of showcasing terroir through the pure expression of the grape.

Maison Louis Jadot blev grundlagt i 1859 af Louis Henry Denis Jadot i hjertet af det historiske Beaune og har siden udviklet sig til et af Burgunds mest respekterede og alsidige vinhuse. Med en imponerende portefølje af vinmarker i Côte d'Or, Chablis, Côte Chalonnaise, Mâconnais og Beaujolais forener vinhuset stolte håndværkstraditioner med en præcis og omhyggelig vinifikation. Jadot arbejder kompromisløst for at lade terroiret skinne igennem ved hjælp af naturlig gær, nænsom brug af egetræ og minimal indgriben, så hvert enkelt climat får sit helt autentiske udtryk.
