Perched at the very summit of the legendary Hermitage hill, surrounding the historic chapel of Saint-Christophe, lies the 'L'Ermite' vineyard. This mythical site, steeped in the lore of the 13th-century crusader-turned-hermit Gaspard de Stérimberg, yields one of the world's most profound and collectible white wines. Crafted from extremely old Marsanne vines—some exceeding a century in age—clinging to poor, granite soils, M. Chapoutier's L'Ermite Blanc is a masterclass in biodynamic viticulture. The grapes are hand-harvested at peak maturity and fermented in demi-muids, followed by extensive aging on the lees.
