Long before the traditional Champagne method was popularized, winemakers in France bottled fermenting juice, allowing the natural sugars to complete their transformation inside the bottle to trap a delicate, natural effervescence. Chapoutier utilizes this ancient, low-intervention technique to capture the pure, unadorned essence of the grapes, typically sourcing from cool-climate parcels in the Rhône valley.
