Winemaker Kim McPherson, a seminal figure in the modern Texas wine industry, utilizes Mediterranean varieties that thrive exceptionally well in the sandy soils and high elevation of the Texas High Plains AVA. The name Les Espines, meaning 'The Thorns' in French, is a poetic nod to both the rugged beauty of the Texas landscape and the resilient nature of these grapevines.
