Brought to South America by Spanish missionaries in the 16th century, País had fallen out of favor, relegated to cheap table wines. In a visionary project alongside local universities, Miguel Torres sought to rescue this historic grape and support small-scale heritage farmers in the Secano Interior. Crafted using the traditional method with a second fermentation in the bottle, Estelado showcases the unexpected elegance of País.
