Defying the conventional wisdom that Spain's Mediterranean climate was far too warm for the finicky, cool-climate Pinot Noir grape, Torres sought out elevated parcels up to 520 meters above sea level. Here, cool nights and clay-limestone soils mimic the continental conditions necessary to preserve the grape's delicate acidity and aromatic complexity.
