Sourced across limestone and chalk terroirs, the fruit undergoes temperature-controlled stainless steel fermentation to preserve pristine primary characteristics, followed by complete malolactic conversion. Extended aging on the lees in underground chalk cellars contributes textural complexity and biscuity autolytic depth before disgorgement.
