Oliver Zeter's deep-seated passion for Sauvignon Blanc reaches a sparkling crescendo in his Sauvignon Blanc Brut. While the Pfalz region has historically been synonymous with Riesling, Zeter pioneered the elevation of Sauvignon Blanc, eventually applying the traditional method (Flaschengärung) to this highly aromatic variety. The grapes are harvested early to preserve their electric, spine-tingling acidity, followed by secondary fermentation in the bottle and extended lees aging. This meticulous process tempers the grape's wild, herbaceous nature with a creamy, persistent mousse and delicate brioche undertones, resulting in a sparkling wine of striking individuality. The bottle is adorned with the estate's signature whimsical bear, a historical sketch by Pfalz artist Otto Dill dedicated to Oliver's great-grandfather, Walter Baer.
