✨ wine.spec_sheet

Osborne's Sibarita Oloroso VORS is a monumental liquid treasure with roots tracing back to a historic solera established in 1792 by the legendary Domecq cellars. Sourced from the premium white albariza soils of Jerez Superior, this rare gem is crafted predominantly from Palomino grapes with a minute addition of Pedro Ximenez, lending it a subtle 'abocado' roundness. Designated as VORS (Very Old Rare Sherry), it undergoes more than three decades of oxidative aging in traditional American oak casks. This slow breathing process concentrates the wine into an incredibly complex elixir, showcasing deep mahogany hues and a mesmerizing aromatic profile of toasted walnuts, dried figs, exotic spices, and noble wood, underpinned by a vibrant, saline acidity characteristic of its Andalusian terroir.

Osborne's production philosophy centers on meticulous aging, utilizing the traditional dynamic solera system for their Sherries in Spain and classic lodge maturation for their Ports in Portugal. Their highly acclaimed portfolio ranges from rare, decades-old Sherries like the Venerable Pedro Ximénez 30YO and Bailén Oloroso to elegant, structured Ports including aged Tawnies, Late Bottled Vintages, and classic Rubies.
