Oyster Bay, named after the local Oyster Bay in Marlborough, played a pivotal role in showcasing New Zealand's cool-climate winemaking potential to the world. While Marlborough is globally renowned for Sauvignon Blanc, Oyster Bay Chardonnay highlights the region's versatility. Grown in alluvial soils carved by ancient glaciers, the grapes benefit from long, sunny days and cool coastal breezes. To craft this expressive white, winemakers utilize a combination of cool temperature tank fermentation to preserve the vibrant peach and citrus fruit characters, alongside partial barrel fermentation and stirring of the lees to introduce a delicate creaminess and subtle oak complexity. This balance of freshness and texture defines the classic Marlborough Chardonnay style.

Oyster Bay blev grundlagt i slutningen af 1980'erne og er ejet af Delegat Group. Huset opnåede international stjernestatus, da dets allerførste årgang 1990 vandt det prestigefyldte Marquis de Goulaine-trofæ for bedste Sauvignon Blanc ved International Wine and Spirit Competition i London i 1991.
