Oyster Bay was one of the pioneering wineries that defined the modern New Zealand wine industry, capturing the world's attention in the early 1990s. While Marlborough is globally famous for Sauvignon Blanc, its cool maritime climate, abundant sunshine, and ancient alluvial river valleys also provide an ideal terroir for Pinot Noir. Oyster Bay's Pinot Noir is crafted to showcase the vibrant, elegant side of the grape. The fruit is sourced from select vineyards in the Wairau and Awatere Valleys, where warm days and cool nights preserve natural acidity and intense varietal aromatics. Gentle crushing, cold soaking, and fermentation in open-top fermenters, followed by aging in a combination of French oak barriques and stainless steel, result in a wine defined by fragrant red cherry, sweet plum, and delicate spice notes.

Oyster Bay blev grundlagt i 1988 af Delegat-familien og opnåede lynhurtigt international anerkendelse, da husets allerførste årgang 1990 vandt Marquis de Goulaine-trofæet for bedste Sauvignon Blanc ved International Wine and Spirit Competition i 1991. Dyrkningen foregår på de ikoniske alluviale flodterrasser og stenede siltjorde i Marlboroughs Wairau- og Awatere-dale, suppleret af førsteklasses parceller i Hawke's Bay på Nordøen. Mange solskinstimer kombineret med kølige, maritime nattevinde sikrer en lang modningsperiode og bevarer druernes naturlige syre. Markarbejdet følger nøje de strenge krav under Sustainable Winegrowing New Zealand på tværs af samtlige parceller. I vinkælderen foregår gæringen på temperaturstyrede ståltanke for at bevare en ren og uspoleret aromatisk friskhed. Denne tilgang definerer husets stilskabende Marlborough Sauvignon Blanc, Chardonnay og Pinot Noir samt deres stenfrugtprægede Pinot Gris og smidige Hawke's Bay Merlot.
