Crafted in the heart of the Valpolicella region, the Pasqua Black Label Amarone is a testament to the ancient Roman technique of 'appassimento'. According to local folklore, Amarone itself was born from a forgotten barrel of sweet Recioto that fermented to completion, turning dry and earning its name from 'amaro' (bitter). For this Black Label expression, hand-harvested bunches of Corvina, Rondinella, and Corvinone are carefully laid to dry on traditional racks in well-ventilated drying rooms (fruttaio) during the autumn months. This process dehydrates the grapes, concentrating the sugars, acids, and aromatics. Following a slow, cool winter fermentation, the wine undergoes extensive aging in oak casks, resulting in a rich, velvety, and deeply complex profile marked by notes of dark cherry, dried plum, cocoa, and sweet tobacco.
