Hailing from the high-altitude Montevegro vineyard in the Val d'Illasi, Pasqua's 'Mai Dire Mai' (meaning 'Never Say Never') Valpolicella Superiore represents a bold, modern masterpiece born from challenging, stony volcanic and limestone soils. This premium red is crafted from a classic Veronese blend of Corvina, Corvinone, Rondinella, and Oseleta. The grapes undergo a meticulous selection process, with a portion undergoing a brief appassimento drying phase to concentrate flavors before aging in French oak barrels. The result is a wine of extraordinary depth, complexity, and elegance that challenges traditional expectations of the Valpolicella appellation, offering intense dark fruit, spice, and mineral notes.
