The white wines of this region are shaped by an intense Mediterranean climate, characterized by hot summers, low rainfall, and the powerful Tramontane wind that naturally keeps the vineyards healthy. Grown on complex soils of black schist, clay, and limestone, the vines yield concentrated, expressive fruit. This Roussillon white blend typically undergoes temperature-controlled fermentation in stainless steel to preserve its vibrant fruit character, with a portion sometimes aged on fine lees to add texture and complexity. It captures the wild, aromatic essence of the southern French garrigue, balancing rich stone fruit flavors with a distinct mineral backbone.

Domaines Paul Mas bygger på en stolt vinmagerarv, der går helt tilbage til 1892, men blev i sin nuværende form grundlagt i 2000 af den visionære vinmager Jean-Claude Mas nær Pézenas i Languedoc i det sydlige Frankrig.
