Hailing from the rugged, high-altitude wilderness of northern Mendocino County, the Alder Springs Vineyard Chenin Blanc is a testament to extreme viticulture. Founded by Stuart Bewley in 1993, Alder Springs is legendary for its steep, fractured sandstone slopes and intense maritime influence, sitting just miles from the Pacific Ocean. Pax Mahle harnesses this unique terroir to craft a Chenin Blanc of striking purity and tension. Utilizing native yeast fermentation and aging in neutral French oak and concrete, the wine preserves the vineyard's signature flinty minerality, vibrant acidity, and textured mouthfeel. It stands as a brilliant California homage to the classic, bone-dry styles of the Loire Valley.

Pax Wines blev grundlagt i 2000 af Pax og Pam Mahle og er et anerkendt vinhus beliggende i Sebastopol i Sonoma County, Californien. Vingården er kendt som en pioner inden for 'New California'-bølgen og har særligt fokus på kystnære terroirs med køligt klima i Sonoma og Mendocino County. Hos Pax arbejder man ud fra en minimalistisk, klassisk europæisk tilgang til vinfremstillingen med brug af helklasegæring, vildgær samt modning på neutrale franske egetræsfade og betontanke for at bevare renhed og friskhed. Vinhuset er især berømmet for sine stilskabende, mineralske og krydrede Syrah-vine – herunder aftapningerne fra Sonoma-Hillsides og Alder Springs Vineyard – foruden dynamiske, terroirprægede fortolkninger af Gamay, Chenin Blanc og historiske druesorter.
